This is the cake I grew up watching being made — dried fruit steeped in rum for months, sugar burnt down dark by eye. I bake it now the way Aunty Mae taught me, by feel, for the moments that matter.


The woman who taught me by feel.
My earliest and most powerful memories are in Aunty Mae's kitchen, where she would work her magic. I'd watch her mix the fruit and spices, captivated by her hands moving through the ingredients and the warm, rich aroma filling the room. She taught me that a true Caribbean cake is more than a recipe — it's a piece of our heritage, filled with soul, passion, and the love of generations.
Now I carry on her legacy. Every cake I bake is a heartfelt tribute to her, honouring the tradition she shared with me. When you enjoy one of my cakes, you're not just tasting a cake — you're tasting a slice of our story.
